Polysaccharides

Polysaccharides are defined as linear or branched chains of more than ten monosaccharide residues linked by glycosidic bonds. Homopolysaccharides contain identical monosaccharides and those with more than one are classed as heteropolysaccharides, in either case molecular weights may be high and can be greater than 2x106 daltons. Polysaccharides can carry substituents such as pyruvate, succinate and acetate, they can also contain uronic acid residues as well as less common sugars (eg sialic acid). The main functions of polysaccharides in living organisms are to provide structure (cellulose, chitin, pectin) or for energy storage (starch, glycogen). However, some polysaccharides notably the glycosaminoglycans are known to have other important roles in for example wound healing, neurophysiology, cognition and behaviour.
